Food Processing

This course is for people working in the food processing industry who want to gain skills in the operations and practices relevant to their workplace.  You will develop skills and knowledge to enable you to work safely and efficiently in running food manufacturing processes, to assist others in their work and/or supervise others. You will also learn how to monitor the implementation of a food safety program and a quality program as well as monitor occupational health and safety systems and procedures.

Certificate II

12 units required to be completed to attain this level of the qualification.  This is comprised of 5 core units and 7 elective units that can tailor your training program to meet your needs.

Core Units

  • Present and apply workplace information
  • Implement occupational health and safety systems and procedures
  • Implement quality systems and procedures
  • Implement the food safety program and procedures
  • Use basic mathematical concepts

Electives

Suggested Pathway for a Production Worker

  • Participate effectively in a workplace environment
  • Dispense non-bulk-ingredients
  • Operate a mixing/ blending process
  • Operate a depositing process
  • Operate a process control interface
  • Clean equipment in place
  • Participate in improvement processes

Suggested Pathway for a Packaging Worker

  • Participate effectively in a workplace environment
  • Operate a high speed wrapping process
  • Operate a case-packing process
  • Operate a forklift
  • Conduct routine maintenance
  • Report on workplace performance

Certificate III

13 units required to be completed to attain this level of the qualification.  This is comprised of 4 core units and 9 elective units that can tailor your training program to meet your needs.  These electives need to come from one of the following streams:

  • Operate processes in a production system, OR
  • Operate processes in a packaging system

  • Monitor the implementation on occupational health and safety policies and procedures
  • Monitor the implementation of quality and food safety programs
  • Present and apply workplace information
  • Use basic mathematical concepts

21 units are required to be completed to attain this level of the qualification.  This is comprised of 4 core units and 17 elective units that can tailor your training program to meet your needs.
